Take-out is expensive. So, make these noodles!!

Last night was the second time I made Dan-Dan Noodles from Top Secret Restaurant Recipes 2.  This "top secret" noodle recipe comes from PF Chang's, but I've never actually tried them from the restaurant.  It's basically noodles and chicken with a thick, sweet, and spicy sauce.  I have made some thoughtful changes to the book's recipe- it called for 6 tablespoons of soy sauce...holy soy sauce!!  Anyhow, this recipe (with modifications) makes a tasty bowl of noodles when you crave some Asian take-out.  So good, in fact, that I didn't have time between cooking and eating to take a picture! So, I'll give you this picture instead. It's called the chopstick bra! Convenient!


Top Secret Recipes Version of P.F. Chang's Dan-Dan Noodles (Modified by Malorie)

Serves 2

2 skinless chicken breast fillets, cooked and minced into tiny pieces (I bake mine from frozen for 30 min or so, leave 'em naked!)
6 oz. rice noodles, cooked (I used spaghetti! Tastes just as good and is cheaper at a grocery store.)
2 tbs. veg/canola oil
1 tbs. minced garlic
1/4 c. chopped green onions (about 2 onions)
1 1/2 tbs. soy sauce (I use San-J Tamari, tastes good.  I wouldn't use La Choy or other fake soy sauce because it doesn't have great flavor (or any flavor for that matter).  If it says "hydrolyzed soy protein" in the ingredients, step back!!)
1/2 c. chicken broth
1/4 c. brown sugar
1 tsp. chili-garlic sauce (any hot sauce would probably be good, maybe not Tabasco or Franks, so really not any hot sauce...just use Sricha with the rooster on it!)
4 tsp. cornstarch
1/2 c. water

1. Cook your chicken, let cool a bit, chop it up!
2. Cook your noodles.
3. Now for the sauce:  heat oil over medium heat in a saucepan or wok.  Add garlic and green onion and saute for a minute, being careful not to burn the garlic.  Add the soy sauce, brown sugar, chicken broth, and chili-garlic sauce.  Combine the cornstarch with 1/2 c. water and stir it in the sauce.  Simmer sauce for 2 minutes until it thickens.
4. When the sauce is thick, add the chicken and simmer for 5 more minutes.
5.  In a big serving bowl or in the sauce pan, toss the noodles with the chicken and sauce.
6. Enjoy!

**I added some steamed broccoli to my bowl.  Dan opted out.
