One quick dinner, one slow...both delicious!
Here are two great dinner recipes that I tried this week: the first were amazing Enchiladas Especiales from the amazing chef, Rick Bayless. They are chicken enchiladas smothered in a creamy poblano pepper and spinach sauce and baked until bubbly. Oh so good but takes some time to make the sauce. The second recipe is Salmon with Sweet Chile Sauce from Cooking Light magazine and is ready in 10 minutes. I grilled the salmon 4 minutes on each side and quickly mixed the 4-ingredient sauce together. Just soy sauce, honey, fresh lime juice, and hot chile sauce. Simple! Pair the salmon with rice, noodles, broccoli, or whatever you like. Either meal that you choose to make is sure to become part of your dinner repetoire! (P.S. These are not my own pictures. Malorie! J'adore ton blog! J'ai besoin de faire ces deux recettes! Non, je ne suis pas exactement prof...je suis substituée (est-ce que c'est un mot?). C'est dificil de trouver travail (de prof) ici!. Et toi? J'espere que tout va bien!!
